Our Core Wines
The majority of our wines – mostly varietal wines, but sometimes a blend – sport a label with a piece of Seyburn’s artwork specifically chosen for that wine. The artwork reflects the personality of the wine inside. White wines are generally whole cluster pressed to stainless steel, perhaps with a bit of neutral oak aging for a few months. Rosés are foot stomped, cold fermented and then bottled in the same year as their harvest. The full range of reds are barrel fermented, with the percentage of new oak and time in the barrel dependent upon the varietal and the vintage. Always experimenting in the cellar, the winery crew may also introduce a sweet wine for dessert, a sparkler or even something way out there – hopped wine anyone?
